As I write this, the temperature is hanging out right around 6 degrees above zero. Last time I checked, I had NOT agreed to move to the arctic circle, but I guess there's no reasoning with a polar vortex. For some reason, unbeknownst to me, Denver seems vastly unprepared for this storm despite the fact that it has been in our forecast for over a week. I had to drive somewhere today, and I might as well have been driving in a ski town. There was nary a snowplow to be found, and I was lucky I didn't slide all the way down Capital Hill into oncoming traffic. It was stressful to say the least. After I was safely within the four walls of my home and once my heart stopped racing, I realized that I was desperately craving comfort food. Maybe it was the near death experience or the near zero temperatures, but either way, I channeled my stress into something absolutely mouthwatering! My mom used to make this Celestial Potato Soup for us as kids, but I put a little bit of a twist on it by adding...you guessed it...bacon, cheese, and green onion! Oh and did I mention the bread bowl part? Only the healthy stuff for me today. I included the recipe printable for you below, too.
I actually used a handheld blender to really smooth out my soup. It gets really thick so feel free to add water if you need to. The bread bowl is optional yet highly recommended. And if you are trying to cut back on calories, limit your sour cream to just a single cup, and then just add a dollop on top of your finished product. Trust me, the soup will still be creamy and savory. I hope that this helps you stay nice and cozy on the cold winter nights ahead. Brrrrr.
