It is finally starting to warm up around here. Last week we had a big snow of 8 inches, but then today it is all melted. The temps have been in the 50's, and I am okay with that. But since it was still a little cold last week, I figured I would have one last winter dressing hurrah complete with accessories. One of my favorite things to do is mix prints especially when that involves mixing plaids. This coat from Anthropologie is last year's, but it foots the bill for being both versatile and adorable.
Raise your hand if you love chocolate! What about mint AND chocolate?!?! I mean peanut butter and chocolate are definitely up there on my list of best flavor combinations ever, but mint and chocolate are easily a close second. In case you didn't know, I am also a proud Girl Scout graduate. I actually was in the same troop since I was in 5th grade - many of my troop mates are still dear friends today.
Obviously, my love of mint and chocolate means my favorite Girl Scout cookies are, duh, Thin Mints. Nothing is better than a tasty Thin Mint (especially refrigerated) morning, noon, and night. But we all know how painful it can be when you have a craving for that tasty goodness, but it isn't Girl Scout Cookie season. So, dear friend, I bring you my Thin Mint Girl Scout Cookie recipe so that you can wallow in the flavor of minty chocolate all year long.
I made these for my husband this weekend, and he said that the only thing that makes these different from regular Thin Mints is the fact that you can taste the difference in ingredient quality. Since the Girl Scouts are producing these things en masse, they probably can't afford to use Ghirardelli chocolate or high quality mint extract - otherwise those cookies would break the bank! But since you are making them on a smaller scale, I encourage you to use the best ingredients you feel compelled to use.
